Eminence Kids Foundation Annual Soup Night
Because of these incredible healing properties, organic soups are a key component of the Eminence Kids Foundation’s donations. Annually, Eminence Organic Skin Care employees volunteer their time to prepare organic soups for seriously ill children and their families. This heartwarming Eminence Kids’ Soup Night is highly anticipated as the team loves gathering to chop organic produce and simmer soups like Vegetarian Minestrone and Chicken and Grilled Corn Chowder.
A favorite of Eminence Organics President, Boldijarre Koronczay, is homemade Hungarian mushroom soup. This soup marries his Hungarian roots with his love and appreciation for culinary creations from organic farms. Hungarian mushroom soup is loved by kids and families of all ages and is perfect for your holiday feasts, gatherings, or quiet winter afternoons spent together as a family. Mushrooms are dense in minerals, nutrients and full of protein for a hearty vegetarian meal.
Hungarian Mushroom Soup
3 tablespoons organic olive oil
2 cups chopped organic yellow onions
1 pound fresh, sliced organic mushrooms (try shiitake mushrooms for an extra immune boost)
2 teaspoons organic dried dill weed
1 tablespoon organic paprika
2 cups organic, low-sodium chicken broth
1 cup organic milk or unsweetened, unflavored milk alternative
3 tablespoons organic whole wheat flour or organic rice flour
Salt to taste
Ground black pepper to taste
2 teaspoons organic lemon juice
¼ cup chopped fresh parsley
½ cup organic sour cream or organic Greek yogurt
Warm olive oil in large pot over medium heat. Sauté onions for 5 minutes. Add mushrooms and sauté for an additional 5 minutes. Stir in dill, paprika and chicken broth. Reduce the heat to low, cover and simmer for 15 minutes. Taste and salt as needed.
In a separate small bowl, whisk together the milk and flour. Pour into the simmering soup and mix in well. Cover and simmer additional 15 minutes, stirring occasionally.
Stir in salt, ground black pepper, lemon juice, fresh parsley and sour cream. Stir and allow new ingredients to heat through over low heat, about 5 minutes, then serve.
